Q: What manufacturing process must jasmine tea undergo to retain its strong aroma?

A: Flower tea must be scented during its manufacturing process. This means putting jasmine flowers together with tea leaves to allow the tea leaves to be infused with the fragrance of jasmine. Jasmine flowers release their fragrance only when they bloom at night. Thus, jasmine flowers have to be in bloom in order for tea leaves to adequately absorb their fragrance. Because of this, the scenting process has to be done at night.

At dawn, fresh jasmine flower buds are harvested and temporarily refrigerated to prevent the flowers from blossoming. At dusk, just before the flowers bloom, jasmine flowers and tea leaves are evenly placed, with one layer of jasmine over one layer of green tea leaves. At night, when the flowers bloom naturally, their fragrance enters the tea leaves. The next morning, when the green tea leaves have sufficiently absorbed the jasmine fragrance, the first scenting is complete. The used jasmine flowers are discarded and fresh ones are harvested again to repeat the scenting process.
